shellfish allergy

Hello!
I was wondering if it was possible to easily navigate Taiwan with a shellfish allergy. I have only experienced hives thus far, but my sensitivity has gotten progressively worse, so I carry an Epi-pen. I have also heard mixed comments about how someone will list the things they can't have, but it is sometimes not taken seriously or food providers are too rushed to remember to do it. Is anyone able to provide any insight into this? Thanks!
