Feedback on 3 week South Africa Itinerary

Looking for some itinerary assistance for my upcoming solo trip to South Africa (first time in Africa). The trip is based around horseback riding and malaria-free (if possible prefer not to take meds) safari.

March 16-18: Fly into Durban, spend a couple days to overcome jet lag, tour Grey St and the Botanical Garden and maybe take a surfing lesson
March 18 - 23: Want to go horseback riding at Khotso Lodge in Underberg to the Drakensberg Mountains/Sani Pass to Lesotho and do Hluhluwe-Imfolozi Park and St Lucia - if I do this in a circuit with a rental car is there a better end to start on?
Return rental car and Fly Durban to Mbombela - March 23 is tentative flight date (one non-stop/day)
In Mbombela rent a car and drive panoramic route and do a homestay in Tzaneen on a macadamia/avocado farm
Need to be in Vaalwater for horse safari (booked) on March 27 - April 1
April 1 - 4 at Makweti Safari Lodge (tentatively booked)
Return rental car and Fly out of Joburg April 7 -
Ideas for April 4-7?

How do I insure a high clearance rental car that won't have my luggage visible? Concerned about car break-ins since road tripping. I understand not to drive at night and keep windows up and doors locked. Do you tip car park attendants before or after parking? Any other tips to not be a target for theft/carjacking with a rental car?
