Do you mean Newcastle upon Tyne or Newcastle, Shropshire or Newcastle-under-Lyme?
Maybe one of the others in Wales or Scotland?

Assuming you mean Newcastle upon Tyne (let us know if its is one of the other Newcastles) . . . I'd make the first stop almost anywhere in the Yorkshire Dales -- literally scores of options. Aysgarth or Masham, or closer to Halifax - Bolton Abbey.

From there to Newcastle - Durham, or Hexham, Haltwhistle, Haydon Bridge (or anywhere else along Hadrian's Wall)

Normally we'd drive this route in about 2 and a half to 3 hours maximum, so I'm not sure why you'd want to stay overnight in between. If it's just to see more of that area, then consider Richmond. It's a typical old market town with several decent hotels or pubs with rooms and has a choice of decent restaurants in the centre. From Richmond up to N-O-T is just 60 to 90 minutes, traffic permitting, and is about 50 miles.
