The only one I've used is Parker Villas, but that was several years ago.
From my experience, there are two things to know before you decide on a property:
1) What part of Tuscany do you want to be in? The region covers 9000 square miles. And do you want to be within walking distance of a town?
2) Is everyone comfortable with the fact that rooms are most likely not going to be all alike? Who gets the bigger room, en suite bathroom, direct access to a terrace, as examples, and how will cost per person/couple be calculated?

www.chianticortine.it Our favorite. We stayed there about 10 years ago and are booked to go back there the last week in March. Beautiful place about half way between Florence and Siena. Good base from which to explore many of the Tuscan hill towns.
