One of the oldest restaurants in the Plaka, with dancing and live music is Kalokerinos.

Keep in mind that this is a restaurant mainly for tourists, and groups....
There are quite a few restaurants with live music in Psiri, next to Monastiraki station, but without dancing..
Psiri is very popular amongst the Athenians ( even though a bit overpriced...)
