St-Paul-du-Vence is about an hour or so by car or bus from Cannes - a smallish town but often very very crowded.
Near Antibes and Biot on the coast is a large water park that is part of Marineland:

I would suggest that when leaving Roussillon you drive to your hotel in Cannes. And do some Cannes things.
The next day do what you wish in Nice.
On Friday if you are so inclined there is a wonderful way to watch the fireworks from the beach in front of the Carlton. Call the Hotel and see if you can get reservations for their dinner and fireworks display.
I would omit St Tropez because in July the trip can be 2 hours or more each way. A terrible trip. You can get the same feeling in many of the nearby ports.

Hi, get reservations for the fireworks in Cannes at one of the beaches; dinner is expensive, but you can also just rent a chair and enjoy a glass of champagne. All the beaches do dinners, shop around it you want to do that, prices vary quite a bit.
Also shop around for the beaches during the day; prices vary. Some charge extra for the parasol. The first row along the seaside is more expensive then further back.
St Tropez could be a 3 hour drive on a Saturday - if you go by car go VERY early. Or take the boat from Cannes - buy tickets in advance. The market gets extremely crowded. Don't know the ages of your children but hold on to them.
Aquasplash is ok - our kids enjoyed it when they were young. Marineland is a bit like Sea World. If you go to one of the shows, all commentary is (obviously) in French.
