Look in the "Things to do in and around Lisbon" thread - there are a number of tours listed there - walking driving or even a motorbike and sidecar...

A quick answer - Tours For You http://www.toursforyou.pt/ We used them for a full-day tour to Evora and a 1/2 day tour to Sintram but there are several tours available. The full-day tour we arranged completely by e-mail. The 1/2 day tour we booked the very next day from our hotel, because we were so impressed by the first tour. Two different guides, both with very good English, both very good at their jobs. I cannot recommend them highly enough!! They were great.
