In Venice there is no procedure, and really not necessary. The only two museums that are ever really crowded are the Peggy Guggenheim and the Accademia, and you can time your entrance to avoid lines most of the time. For the Accademia, get in line a half hour before opening.
For Florence, reservations for the Uffizi and the Accademia are recommended because at peak, lines can be hours long. You can call the museums directly, you can have your hotel arrange it, or you can go with an agency like www.waf.it (Weekend at Firenze)
