Can only respond to the dubrovnik part but sure it is applicable to other areas as well. First, you can look at menus bfore you sit, they usually have them posted or people handing them out. Had greek salad at every restraunt at every meal all differnet and all wonderful. Great variety of cheeses. Fresh veges as a menu choice at every place we went; marinated tomatoes, yum. Burek - filo stuffed with either cheese, spinach, or potatoes. Also, pizza is an option in most places with a variety of vege choices. ALmost every place has an outdoor section that is covered. You will have no problems finding places.

so does that mean you eat veal, pork, octopus and squid?
but seriously though - most restaurants will have salads - and the produce is truely organic. As for Hvar try the Golden Shell (the house salad is great), Menego and Luna - all located near St. Stephen's Square.
so you're not going to try the air dried prust (proscuitto) while there?

The best restaurant in Cavtat we found was Taverna Galena/Konoba Galeja, up the side street next to Hotel Supetar.
None of the dinners we had in Dubrovnik were exceptional, but we liked the pizzas at the outdoor cafe right near the old port. Parts of every meal were good...Nautika 2 had excellent sea bass and Proto had a great grilled vegetable platter, but no restaurant was outstanding. We probably would have liked Locanda Peskarija better if we hadn't ordered the seafood risotta. So many people on the forum recommended this dish, but it is black from squid ink and mostly calamari and shrimp (with legs & heads). Many restaurants had black seafood risotto and we did NOT like it. If you go to Trogir, go to Top Balloon and order their seafood risotto, which is made with broth and is EXCELLENT!
