You can check out "Explore Seville" to see what they have listed for Sevilla. I'd check with the Madrid Tourist Office for recommendations on registered guides and with Madrid and Beyond.
You can also read Maribel's Guides to both Sevilla and Madrid for her recommendations.

In Seville we used Concepcion Delgado. She was great for a 2 hour tour. Her e-mail at that time was [email protected] and I believe the website was www.sevi-ruta.com. Our tour was private that day only the 3 of us.
In Madrid we did the tapas tour with British expatriate Stephen Drake-Jones. e-mail [email protected] and website www.welsoc.org
The tapas tour was fun and informative. He has a few other tours but I was told they are all about the same (from other tourists).
Have fun in Spain, we loved it.
