Dear Vik,
I would suggest the York House. It's a 17th century convent converted into an attractive hotel in Lisbon (2km from center).Although it's not stone floored in the rooms the surronding courtyard is done in tradicional portuguese cobblestone. The price at this time of the year should be around what you mentioned. The restaurant is also very good.
If you need some more information feel free to ask.
Vik-

Do you mind if I ask, when are you traveling to Lisbon and did you have better luck on airfare than I did?

I'm trying to go the end of May for less than $1,200! I'm thinking it may cheaper to fly to Paris and THEN get a ticket!
