Depending on how much time you have, you might take a bus or taxi to nearby Piran, which is a beautiful little seaside town. I didn't actually visit Koper, but I understand it is a pleasant town but not quite the picturesque town Piran is.
You might also plan a short excursion to one of the caves (Skonjan Caves is the one I visited) or to the Lipica Stud Farm to see the horses. Again - depends how much time you have.

Koper is the main port, but there is a few interesting attractions (Koper Cathedral, Praetorian Palace) More details here: http://tripedia.info/location/europe...-kraska/koper/
But indeed, Piran is a more popular town on the Slovenian coastline, which can be reach by local bus from Koper. In Piran, you can easily spend half a day to a day. Walking around the narrow street of Piran and by the seacoast is wonderful. It's nice to have a guide, but you won't need a guide-guide:
- Tartini Square is the main square,
- from the City Wall of Piran, you get a nice overview of the peninsula,
- at Benečanka House, you can buy the famous Piranska sol (piran salt),
- the backyard of St. George Cathedral offers a nice view of the sea

There's more things to do in Piran than in Koper, so if times do allow... just be careful not to miss your cruise on the way back as the Slovenian seaside can easily make you forget things
