Hi eatmoreburritos,
You're more likely to find good snow at the glaciers, like at Zermatt and at Les Diablerets. I was at Gstaad for Christmas 2004, and they had snow and a few open runs, but it was pretty early for them.
You should also know that that period is the high season at ski resorts when most hotels are completely sold out. Do you have hotel reservations already? If not, you need to start looking right now!

You could stay in Martigny and take post buses daily to Verbier and Super Grimentz ski resorts. Martigny is in the valley and these resorts aren't too far on the bus - 58 minutes to Verbier and 1h30 mins to Grimentz. Both buses leave you off right at the ski station.
