Help! Where to stay overnight while driving from Kingston, ON to Moncton NB?

Hi, I'm planning to drive from Moncton, NB to Kingston, ON, and then back, at the end of March. On the way back, I'm hoping to break up the driving over two days since I'm driving solo. On the first day, I want to do at least 6-7 hours of driving, which brings me around Quebec City and Edmundston. Then, I'll do the final 6-5 hours the next day. What's the best place to stop in between? I've seen recommendations for Riviere-du-Loup in other threads. If you have any other general advice for driving solo, I'd also appreciate it since this will be my first time.

Quebec City to Moncton is about 8 hours, and those are boring hours.
In Canada, truck drivers have a 14 hour window to drive a maximum of 11 hours, 30 minute breaks after 8 hours.
When driving solo, or with company, I like to start early and end early.
