On the garden level of the Fairmont Orchid, this classy restaurant appeals to both steak and seafood lovers. The star attraction is the signature Australian A6 Wagyu rib eye, seasoned with five different kinds of Hawaiian sea salt. Dry-aged meats from Kulana Farms are served on cedar planks, while free-range chicken and sustainably caught Hawaiian seafood round out the offerings. Everything is made from scratch, including the sauces, and the fish is as fresh as it gets. Special dietary considerations are accommodated; the gluten-free vegetable tempura and soy-free udon are as flavorful as the originals.
