Chef Gert Jan Hageman turned Amsterdam's 1926-built municipal greenhouses into a lovely, modern, and light-filled restaurant (with a glass roof) and garden serving Mediterranean-influenced food. The daily changing prix-fixe dinner menu, with dishes chosen by the chef (vegetarians can be accommodated), always consists of a selection of small starters, followed by a main course and a dessert; many of the ingredients are grown in the greenhouse and surrounding gardens, supplemented by area farmers and suppliers. There's also a three- or four-course lunch menu. The wine selection is delightful, and they do a wonderful job with pairings.
