The Sheraton resort's flagship restaurant is a wonder to behold, beginning with the most exciting menu in Pattaya. Chef Matthew Woolford fuses traditional Thai ingredients with nouvelle French techniques and Indian touches to create dazzling plates like char-grilled Wagyu beef with sour green mango and roasted peanuts; a warm salad of Phuket lobster tikka with cucumber noodles, mint, and yogurt foam; or braised duck and seared foie gras in red curry with lychee and Thai basil. The atmosphere is modern but refined, with dark woods, pillows, and floor-to-glass windows that emphasize the views of gardens, waterfalls, open sea, and Coral Island in the distance.
