Bethlehem's most luxurious accommodation is in a century-old mansion, and the stunning stone building and five-star service make you feel like a sultan. The palace was built in 1910 by Bethlehem Mayor Suleiman Jacir. That original building is the lobby and airy courtyard, with the well-appointed guest rooms sprawl out behind it, arranged around a swimming pool. The Riwaq restaurant serves European fare, while bartenders mix great drinks in a stone cellar in the Makan Bar.
