Colorado Springs is a fun place to visit. You can drive up majestic Pikes Peak and take a hike when on top (timed-entry reservation system). Wander through the colorful rock formations at Garden of the Gods; go through Cave of the Winds; view the amazing Seven Falls; ride the Pike Peaks Cog Railway up part way Pike’s Peak (reservations suggested); wander around Manitou Springs eating saltwater taffy exploring art galleries and the historic Cliff House hotel; bike on the Pikes Peak Greenway Trail; eat and shop in Old Colorado City; check out the Broadmoor Hotel. Hike the Catamount Falls Trail near Green Mountain Falls. Check out the Rocky Mt. Dinosaur Resource Center in Woodland Park. Eat Colorado trout down in the Rabbit Hole with its whimsical Alice in Wonderland décor or eat buffalo at a chuck wagon dinner.
I would recommend doing Garden of the Gods and Pikes Peak and then maybe a day trip to the Great Sand Dunes. There's a donut shop near the top of Pikes Peak that I always remember going to as a kid - I hope it's still there! I would take the rail up the mountain it's a fun experience. Depending on how you acclimate, I would save hiking for the Garden of the Gods just since it's at a lower altitude.
I'm actually working with the National Scenic Byways Foundation to build a new GPS app that allows travelers to customize their routing experience as well as the points of interest and food options they see along the way. It's called Overlook Maps and it will be going live later this year, hopefully before your trip!

They still make doughnuts, but it's now at the new Summit Visitor Center at the top of Pikes Peak. Don't get your hopes up though, they're pretty average.
