I finally made the eggplant and it was really delicios. I added some tofu for protein, which actually worked.
I will consider ground pork the next time.
I cut the chile crisp by 2/3 and my wife found it effect. I added more to mine but not the full amount. I’m so glad I used it instead of plain chili oil, so much more complex. This was a great dish.
It also had a method I’ve never used before or for that matter seen. The ginger, garlic and scallions are chopped fine and piled on
