I made two of these with store bought puff pastry leftover in the freezer. Sliced apples, honey, lemon juice and almond extract and cinnamon cooked on the stovetop for the filling with sliced toasted almonds sprinkled on before the faux lattice closure. On the outside, egg wash, turbinado sugar and more almonds on top. A nice balance of sweet and tart, crunchy and soft. I never peel apples because I think we should eat peels whenever possible.
