Scott,
My suggestion would be to Cruise in Paradise - French Polynesia - on the Tahitian Princess..one of those love boats. You would see Papeete, Tahiti, Moorea, Raiatea, Apia, Pago Pago and Bora Bora. I've traveled most of the world and this is the most romantic place I have been to. This is your time for each other..don't make the trip so busy, packing and unpacking. Enjoy your time together on this very special trip.
Carolyn

Bermuda would be pretty nice that time or year or if you're into genteel southern charm - Charleston(horse and buggy to take you to the civil war era church)or Williamburg could be very fun.

Avoid the paperwork of getting married internationally, or even domestically outside of your home city. Why waste time on vacation waiting on lines at county offices?

Get married at your loca City Hall (literally takes 5 minutes once you have your appt time), and then run off on a great honeymoon! That still counts as elopement in my book.

You can't get married in France because you're not a French resident. It's not like some Caribbean island or Mexico where anybody can get married right away who doesn't even live there. You should find out a lot more about this as marriage is a legal ceremony, mainly. Lots of countries won't allow non-residents to get married there, and residency may vary from a couple days to over a month, as it does in France (40 days). YOu can't just get married that easily in England, either.

In Europe, it's fairly easy for nonresidents to get married in Italy, Greece and the Czech Republic, but not in France. If you only have two weeks total for this whole thing, you'd find it easier to stick with the countries that cater to the quickie wedding crowd, like the Caribbean or Mexico, or your own country.

Scott,

If you want sun and quiet, peaceful and serene then Bora Bora/Moorea would be my choice. It will definitely make her melt, especially if you are water people. An over-the-water bungalow would be perfect. My second choice would be Cap Juluca in Anguilla. The most beautiful beaches I have ever seen!

You can go to Grand Cayman AND get married there..no waiting! Most of these other places you mention you don't speak of getting married while there..isn't that what "elope" means?
