The Palms has somewhat replaced the Hard Rock as the 'MTV crowd' hotel of choice. I'll leave it at that...if you are over 30, you should probably look elsewhere..er..make that 25.

Is it possible to pool hop? Is the security at the pools hard for a family of 3 to get the best of all the pools in Vegas?

Hotels usually ask for your room key to access the pool areas... so, no, you can't pool hop.

Oh yeah, hotel pool security... top of the food chain... unyielding resistance to smiling families... guarding the pool gate.
If you were a 19-year-old working the gate at the pool, how much do you really care if Suzy housewife and her two kids claim their husband has their roomkeys?
If you can't talk your way into a hotel pool, how do you expect to earn a free upgrade?

Based on your age and what you're after, you have chosen wisely.

The Palms is full of the 20 something hard bodies all looking to "hook up". They actually pay a couple hotties to loiter by/in a small "pool" to set up a certain atmosphere...the pool itself is about as big as a bathtub at Mandalay Bay...
