At the last minute, I decided to make corned beef, cabbage, and potatoes....it's so close to being ready!

This is too funny....just returned from my pedicure (ah, bliss) where I was served corned beef and cabbage by the VIETNAMESE salon owner!
As "they" say "everybody is Irish on St. Patrick's Day!! (I don't mind sharing!)

I guess it "snuck" up on me this year. I usually always have corned beef and cabbage today. Then two days later is St. Joseph's Day and I would always make the traditional Sicilian dishes my Great granmother made. I still have time for that. But I missed out today. Don't tell my mom! (the Greene side of the family)

Happy St Patrick's Day to Patrick and everyone. We've gobbled down our corned beef and cabbage (yum) and have settled in to watch basketball. No Guinness here, however, but enjoying a slightly stronger Irish beverage (double yum)! :)

This day also brings to mind the story an acquaintance once told me of how when her grandfather came to America, he was so proud to be here & wanted to leave the "old country" behind. He wanted to start his American life with a REAL, GOOD American name for him & his family. He chose "O'Brian"!

My husband, who was born and raised in Ireland, never had corned beef until he came to the US.
