I put the turkey in the oven with foil over it until the last hour or so, then I take the foil off and let it get brown. That way you keep in the juices longer and it does not dry out and get overly brown.

Scarlett and amwosu, Thank you. The turkey turned out perfect and it was my first one. I kept it covored until the last hour to let it brown like you said. It was brown, tender and juicy. I consider it my practice turkey. Now I think I may cook and bring a similar turkey for Christmas so my mom doesn't have to cook. The hardest part is trying to figure out what do do with all those scrapps and bones. I put some of it in a container and into the frig to use for a soup later. I didn't give any bones to my dog because he can chock on those type of bones.

Glad to hear the turkey turned out well jorr.

I just can't make a juicy turkey. Not enough practice as we eat out on Thanksgiving and Christmas. My brother smokes one, deep fries one and oven roasts one each holiday. I need to start going to his house for the holidays.

It really is easy, isn't it?
I take half of the turkey and break it up, put it in zip lock bags and stick them in the freezer. Someday, I figure someone will feel like having turkey again :)
I throw the bones etc out , I never could get fresh soup right with bones and all.

Jorr, turkey stock is really easy.

Break up your turkey carcass. Heat a little oil in a large stockpot, then toss in the carcass and brown it a bit. Add water (but not so much that you totally cover the bones - I think it makes the stock too watery), some chopped onion and celery, and a few peppercorns. Bring to a boil, lower heat to simmer, cover, and simmer for about two hours. Cool and strain stock and it's good to go.

If you have a pressure cooker, it only takes 35 minutes. :-)

Hello everyone, I've been gone. My last two weeks were like Job's in the Bible.

But for everyone who asked, my sister is AT WORK TODAY. She's a tough Chicagoan, what can I tell you. She's tubeless and although a long chemotherapy and radiation schedule is ahead of her, here is the good news. (And thank you all for asking too- the prayers are working.)

Her lymph nodes were clear and so they only took 1 and 2 (most have 1 through 11 taken) and the isotopes etc. have cleared the surrounding area as well. The tumor was large but extremely local. My son got out of the hospital too and he did NOT have a heart attack.

I've gotten my Christmas presents already.

jorr, I found out that the freezeguard cell device I wanted for Michigan is in existence. It costs $6000 and is a prototype developed for/by the military. So the freezeguard sensaphone only did work but I did have to put a land line phone installed to operate it. The $6000 cell just isn't in my budget. And the place didn't freeze all the way, only the kitchen sink. But my guy even caught that in time. Father Winter caught us big time- and early this year.

Caph, thinking of your husband too.

And I'm SO SORRY that the GTG in Chicago happened without me. I did want to have fun. And I did miss you. Lisa, Vittrad, Kristi, Mr.& Mrs. Go, indytraveler, etc. I'm SO sorry.

The rest of December IS going to get better. I keep thinking about that poor little boy Josh singing Christmas carrols in the car with his family and a SWA 737 skids into the street and into his spot in the car. So dark, I know. But have fun while you can.

JJ5, I can not fathom that the device you are talking about costs $6000. I'm totally confused. My parents bought a gadget for about $20 which attached to their existing phone line to call them if the temp went below a specified amount.

This operates, jorr, without a phone line. This house had no phone or land line, nor the means to maintain one there cheaply. I had to run a line besides the set up fees. It's rural- on a lake. This unit would measure temperature, electrical power, noise level etc. AND would cell you to a home number if the data was outside of a set range.

I had to bite the bullet and get the phone land line put it. It's already in, plus I will have to be paying much more a month now to keep it live as well.

But the sensaphone we got on ebay for $197 is already installed. It's much better than the Freezeguard deal. It runs about $400 new. This one was less than 1/2 price.

Ironically just today we got the sensaphone set up and working. We've just gotten off the phone and we are laughing our ($(*#*'s off. A robot voice comes on and tells you facts for 3 or 4 minutes, like it was a guard giving an army report.

"The temperature is 58 degrees, the electricity is on, the gas is on, the pump is active, the noise level is solid and at a diminished level etc. etc. It is a stitch. And if anything changes out of the ranges you set in its database, it will call three phone numbers one after the other until someone responds to it.

Isn't technology wonderful!

I wanted to do all that on a cell phone without putting the land line in. It does exist already.

jj5 and jorr...my stepfather has that telephone system for his home in wilmington, vt. i'm not sure how much it costs. i assume it wasn't $6k!
