Jackson Hole burgers are grilled, however they ARE covered for much of the cooking process in order to keep the flavors/juices/moisutre in.

This weekend i'm traveling to Boston, and on the way hope to (i'm planning on it at least) stop at Ted's in Meriden, CT where the entire burger cooking process is steaming. They are cooked in a patented steamer that is only sold at the local hardware store around Meriden. Apparently, there is a 20 mile radius or so around Meriden where burgers are steamed (as the sole means of cooking), a process not found anywhere else in the country.
