Getting a 2-day pass covering both Disney parks makes sense.

Trying not to impose my values on you, but I have found that spending less $ leads to a more memorable trip. Some free or nearly free things to do: drive the Orange County coast from Newport Beach to Dana Point stopping at pull outs along the way. A West LA day with Hollywood, Griffith Observatory, and Santa Monica/Venice. Those are basically free days and good days. It's potentially bad traffic to/from Anaheim but check out the HOV lanes, I think the Harbor Freeway has them, and maybe they have got them built on I-5 by now.

For general info, these apartment-type hotel chains all offer a free breakfast room, and free dinner some days a week all with free booze:

Staybridge Suites, dinner MTW
Homewood Suites, dinner MTWTh

Residence Inn, evening snack MTW
Embassy Suites, evening snack I think every day

The Staybridge in Vegas is not within walking distance of a desirable part of the Strip (excellent hotel for children, great pool) , but the Homewood Suites is.
