Which station in Paris would one leave en route to Blois? Where can I find schedule info?

If you take a regional train, you will leave from Gare d'Austerlitz. If you take a combination of TGV and regional train, you will leave from Gare Montparnasse.

The direct trains to Blois from Paris leave from Austerlitz. I don't think there is any direct TGV service.

No, there is no direct TGV service. That's why I referred to a combination of TGV and regional train, starting from Gare Montparnassee, as shown on www.bahn.de. Personally, I would keep things simple and take a direct train from Gare d'Austerlitz.
