train from Bamberg to Munich
To take the train from Bamberg to Munich on a Saturday am I able to purchase a Bayernticket or other local ticket? There will be 3 adults. Do I need to book that ticket in advance or the day of travel?

Use the German Railways itinerary page and specify "only local transport" under "means of transport" - only local and regional train options will appear. Specify "all" instead for all connections, including fast trains. You may find that an advanced-sale discount ticket suits you better once you check the schedules.
