Bill, it seems to be a question of expectations, and I guess there's a cultural component in there somewhere.

Here, where tipping isn't the norm (certainly never in pubs), I sometimes find lax service, but not all that often, and staff are almost always cheerful and friendly. Same in New Zealand. Maybe we're exporting our surlier barmen to London, where the weather puts them in an even worse mood?

I accept that if the pay system changed in the US prices would rise accordingly. I'm less convinced that if we went over to the American approach our prices would fall - things never seem to work out that way, do they?

Neil:

I agree, lowering prices just doesn't appeal to the average restaurant owner. Maybe one day in the not too distant future I'll get to enjoy a pint over your way.
