I'll second Travelnut's suggestion of Boom Chicago - an American comedy troupe that came to Amsterdam about 15 years ago and were hugely successful - now have their own theatre just off the Leidesplein - lots of poking satirical fun at Americans has created a large Dutch following as well as Yanks on tour.

Top chef Ron Blaauw has a dinner show, until the end of January. 6 courses, in an early 19th century mobile dance palace, decorated with mahogany, red velvet and mirrors. Between the courses, there will be acrobatics, singers and magic. tables are for 6, so you would share with others if there are just two of you (but a good way to meet people too!). It's on the border of the IJ river in Amsterdam.
