Postcript: The grapes in that white blend are Rolle and Colombard. I think (may be mistaken) that the pairing of salmon and red wine, outside red wine sauce, is a heresy that appeared in the late 1950s and flourished in the permissive '60s. President-elect Sarkhozy has promised to put an end to the "heritage of '68," so those who enjoy pinot noir with their fish had better come and indulge toute de suite!
