Carcasonne Cassoulet

Looking for a restaurant when I can have cassoulet that does not inlcude duck or goose, any suggestions?

Thanks.

You may want to bring a can of pork & beans with you then.

Cholmondley_Warner Aug 21st, 2010 06:43 AM

Kate: You're missing the point somewhat.

There's other stuff to eat.

StCirq Aug 21st, 2010 07:14 AM

You're kidding, right?

Sarastro Aug 21st, 2010 10:40 AM

That would be like ordering a meatless hamburger.

kerouac Aug 21st, 2010 10:48 AM

Spaghetti without pasta.

Salad without lettuce.

Sorry to have offended your gastronomical senses.

Carlux Aug 21st, 2010 11:48 AM

Not so much offended, as asked for something that doesn't exist - like salad without lettuce. Cassoulet is made from confit of duck and/or goose. Without it, it isn't cassoulet.

kerouac Aug 21st, 2010 11:52 AM

Actually, cheap canned cassoulet has only pork in it. It is frankly an item that I like for a lazy meal when you want to just dump something in a pan and heat it up (even though I might often add chopped onions and grated cheese to make it completely unauthentic).

I don't think that such an item could be found in a restaurantt, though, and most certainly not in southwest France, unless some innovative chefs

kerouac Aug 21st, 2010 11:54 AM

(hit the send button accidentally)

...unless some innovative chefs are experimenting with seafood cassoulet, the same as has already been done with seafood couscous and seafood sauerkraut.

StCirq Aug 21st, 2010 11:55 AM

Seafood sauerkraut? That sounds perfectly dreadful.

kerouac Aug 21st, 2010 11:56 AM

Oh, flying_kate, I did want to ask why youu do not want duck or goose? Fowl is generally a consensual item unless you are a vegetarian.

Blech...

kerouac Aug 22nd, 2010 08:47 AM

It's quite popular in the Muslim community of Alsace.

jubilada Aug 22nd, 2010 09:11 AM

whether it is good or not, it is not cassoulet, right?

kerouac Aug 22nd, 2010 09:30 AM

No, we got a bit off track.

Cassoulet is a bean stew made with pork, duck and/or goose.

In both Alsace and Germany I have had fish with sauerkraut. One has to rinse the sauerkraut a lot.
