Carcasonne Cassoulet
Looking for a restaurant when I can have cassoulet that does not inlcude duck or goose, any suggestions?

Not so much offended, as asked for something that doesn't exist - like salad without lettuce. Cassoulet is made from confit of duck and/or goose. Without it, it isn't cassoulet.

Actually, cheap canned cassoulet has only pork in it. It is frankly an item that I like for a lazy meal when you want to just dump something in a pan and heat it up (even though I might often add chopped onions and grated cheese to make it completely unauthentic).
I don't think that such an item could be found in a restaurantt, though, and most certainly not in southwest France, unless some innovative chefs |

Oh, flying_kate, I did want to ask why youu do not want duck or goose? Fowl is generally a consensual item unless you are a vegetarian.

In both Alsace and Germany I have had fish with sauerkraut. One has to rinse the sauerkraut a lot.

Yes, I did not mean to imply that non Muslims do not eat it. I have to admit that I have not yet eaten a fish sauerkraut but I look forward to discovering it some day, same as a seafood couscous.
