As a beach girl, you would probably love Saint-Martin. I have fallen in love with the french side, not much developed (no resorts, no malls) and thus still full of small restaurants (we call these Lolo's I think), great beaches, snorkeling etc. People are real great (and most speak english btw).

Such great beaches I found in Mexico too (Playa del Carmen area). More flora/animals in Mexico (turtles, fishes).

I saw fantastic beaches in Brittany but would not the same weather...
