If you can find a shoyu shop, that's the best, as they will let you taste. Because the labels are rarely in English, I can't tell you the names of some of our favorite finds! Depato food floors will sometimes offer samples.
Brands that I know and like are Okamoto, Yamaroku, Yamasa (easy to find, but look for their Marudaizu style), Sawai (in Kyoto). You will find Naogen in Kanazawa. All of these companies make lots of types, including artisanal shoyu. There are standard categories of Shoyo- regular, double brewed, Tamari, shiro (white) and Awaguchi(mild).. I like to stock up on white and mild in Japan as it's harder to find in Hawaii.even the regular supermarkets will have all these varieties. The pink soy sauce is Tottori brand, possibly called rose shoyu. It may be seasonal as I don't always find it. It tastes like shoyu, but looks beautiful in salad dressings and sauces. Don't mistake the Hello Kitty pink bottle for pink shoyu. It isn't. If you are flying out of Narita airport, they have a shopping/dining area on the 4th floor of terminal I, BEFORE passport control. At the far end is a shop we just discovered last month. Kind of looks like a whole foods type place; lots of wood shelves.They have senbei crackers and snack food samples in the front, but in the back left corner about knee high are a bunch of bottles of regional soy sauces. No samples and not particularly cheap, but the guy described them pretty accurately- at least the one I've already opened is great. If you happen to like senbei, their bags of mixed broken ones are amazing. I'm looking forward to stocking up on them my next trip! |

Reading about eyeglasses that are really thin is another item I would like to buy. Just curious, what is the price range of these eyeglasses? I buy eyeglass frames when I'm in Asia, but my personal favorite frames are from the Japanese company Four Nines (999.9) which I buy both in Singapore and Tokyo as they work for me.
