Fodor's Expert Review Chala

This small restaurant on the upper stretch of the Bajada a los Baños is a veritable Dr. Historic and Mr. Modernity. The exterior and wooden porch in front blend into the ancient surroundings, but step through the door and you're back in the 21st century with a chic bar, lounge music, and wild art installation on the back wall. It befits an establishment that serves such Peruvian fusion dishes as causa patriotica (a mashed potato appetizer filled with smoked trout, crab meat and cream cheese) and ravioli italo-chalenos (stuffed with ají de gallina—shredded chicken in a pepper cream sauce—and smothered in a shrimp cream sauce).
