Colorful inside and out, this trendy restaurant in a bright red turn-of-the-century home has a rotating collection of art (for sale) hanging on its brightly colored walls, which is evocative of Valparaíso's hills. And as the "sabor" in its name alludes, the menu is quite full of flavor. Start by choosing one of their many variations of pisco sours or another creative cocktail from the bar before trying the chef's menu. Try a goat-cheese-and-veggie-stuffed pita bread sandwich with a local craft beer, an updated version of fried congrio (conger eel), or a rich and hearty braised beef served with an equally rich red wine. There's also a small stage on the second floor for live music on the weekends.
