Winemaker and farmer Krista Scruggs has gained national praise for her nuanced, idiosyncratic natural wines made without chemical intervention from grape-growing to fermentation that are available through a limited release annually (subscribe to the newsletter to stay in the loop). ZAFA Wines also has CO Cellars, a collaboration with local cidermakers Shacksbury Cider that can be found inside The Soda Plant on Pine Street. As a working winery for ZAFA and a innovation incubator for Shacksbury, the tasting room at CO is an exciting stop for genre-bending wines, co-ferments, and more. Electric Mayhem, for instance, merges grapes from ZAFA's Vermont vineyards with foraged wild apples for a citrusy, floral, and effervescent wine-cider hybrid that has been barrel aged for 18 months with wild yeast strains. Better yet, it's extraordinarily delicious.
