Lance Eaker hails from Texas, his wife Boo is Korean, and they have combined their impressive culinary talents to cook up some of the best barbecue in Texas at this award-winning, mesquite-smoking barbecue joint, which started as a food truck in Houston. The classics, from Texas dry rub pork ribs to moist prime brisket, are all excellent, but what makes it so unique are the succulent Gochujang ribs, fried kimchi rice, homemade kimchi, and other Korean-inflected dishes that reflect Boo's heritage. Leave room for Boo's BOOzy banana pudding; it's a knockout.

Earl's Restaurant

If you have time for only one meal in Gallup, do as most people do and head to Earl's. The home-style rib-sticking daily specials here include meat loaf and chicken-fried steak, pie, bottomless coffee, and the oversize servings you would expect. Though not in its original location, Earl's has been a family-run institution in the area since 1947. This is a classic diner, grand-scale and Southwestern style, down to the Naugahyde booths and the Western Americana objects hanging on the walls. It's a custom here for Native American jewelry vendors to go table to table displaying their wares. Simply say "No, thank you" if you're not interested and the vendor will leave.

There are four restaurants, a marketplace, wine shop, cooking school, 10 to-go counters, and a cannoli cart, so you can find anything you want to eat or drink here, and maybe discover a few things you didn't know you needed (perhaps a snack size of Piave Stravecchio DOP, a hard cheese from the Belluno province in northeastern Italy). Of note is the gorgeous outdoor rooftop extension of the greenhouse-inspired third-floor restaurant, Terra, which is perfect for grabbing a glass of vino or an Aperol Spritz, some food, and some conversation.

This Tivoli Village standout is all about meat. The menu offers a healthy list of options and cuts, from skirt steak, tri-tip, and hangar steak to a rib-eye cap and more. An on-site butcher shop offers diners the opportunity to buy fresh meat to take home with them as well. The rest of the food at Echo & Rig is pretty good, too: small plates and veggies such as summer corn with fresh marjoram are a big hit. Because the restaurant is large and dimly lit, it has a modern industrial hipster vibe. Don't let that feeling turn you off; you'll be hard-pressed to find a better steak dinner around town.
