Top Chef season 14 contestant B.J. Smith operates this rather stylish take on a down-home barbecue joint. It's in a modern space that's been given a countrified touch with mounted animals heads and gilt-frame mirrors. The big draw, however, is Smith's succulent—and quite creative—barbecue. Get the ball rolling by choosing a couple of the decadent appetizers, perhaps the Frito pie with smoked-brisket chili verde, or pig-ear pork rinds with smoked Bee Local honey. Among main dishes, you can't go wrong with any of the classics, such as hot-link sausages, pork cheeks, or spare ribs, but local smoked steelhead is also a winner, as is the piquant side of apple kimchi. Wrap up your meal with the smoked-chocolate pot de creme.
