James Beard Award finalist John Fleer's newest venture is an upmarket Southern soul food restaurant in the Foundry Hotel, combining traditional Appalachian dishes with Lowcountry and Gullah flavors. The high-ceiling, industrial-style decor is softened by a collection on one wall of sketches of African American women who ran restaurants in the Block, a center of the black business community in Asheville. Dinner dishes include local pork chops with seasoned collards, and breakfast highlights include cornmeal pancakes with maple-sorghum syrup.
