Opened in fall 2017 in a historic redbrick house beside the O'Keeffe Museum, this atmospheric space with warm lighting, beamed ceilings, and an inviting tree-shaded slate patio has quickly earned raves for its well-conceived blend of Spanish, French, and indigenous cuisine. As the restaurant's name suggests, corn plays a key role in many dishes, as do other local staples like chayote, trout, elk, and pinto beans. Although cultivating an upscale ambience, Maize works either for a fancy meal or a more casual experience—one section of the menu features lighter bites designed for sharing, such as blue corn blinis with smoked trout, and wild-mushroom quesadillas with asadero cheese and huitlacoche-tomatillo salsa. Among the more substantial dishes, consider the adobo-grilled pork tenderloin with a smokey posole broth.
