After creating the acclaimed Sensi inside the Bellagio, Chef Martin Heierling has moved over to Vdara, where he continues to innovate cooking in this modern space made welcoming by natural light. Breakfast is standard stuff, though the "sliders" are a whimsical take on the traditional bacon, egg, and cheese sandwich. The lunch menu seems to have a Mediterranean slant; try the marinated white anchovies with feta and piquillo pepper sauce. Dinner brings dozens of eclectic choices, and our favorites include the aromatic coconut and chicken soup and the roast quail and fresh prawns in red curry sauce with an oyster mushroom pie. One word of warning: portion sizes here are small, so be prepared to order more or leave hungry.
