Fodor's Expert Review Fleur by Hubert Keller
Chef Hubert Keller's Fleur has two dining spaces, one fairly intimate and one open to Mandalay Bay's restaurant row, so you can watch the world (or at least Las Vegas) go by. Small plates themed to various cuisines around the world can be enjoyed à la carte or as a tasting menu for two or four. The menu also includes traditional entrée-size portions, burgers, and steaks. Menu items are seasonal, but signatures include white onion soup velouté with truffle oil, and grilled octopus with citrus-marinated fennel. In 2018 the restaurant also added a beer brunch, which pairs certain dishes with craft beers. Then there's the Fleur Burger 5000, a Wagyu beef hamburger with foie gras, truffles, and a bottle of 1996 Chateau Petrus, costing—you guessed it—$5,000. Dairy-free, gluten-free, and vegetarian menus also are available.
