This fine French restaurant with soaring glass walls set high atop the Palms Resort offers one of the best views of the city, including the Strip. At the helm is André Rochat, a French expatriate who's been in Las Vegas long enough to have earned the title of homegrown celebrity chef. The seasonal menu might begin with Rochat's seared foie gras with caramelized pear and vanilla custard or his rich Maine lobster bisque. Entrées include his signature Dover sole Veronique, veal loin with goat-cheese ravioli, or prime rib eye with smoked potatoes. Pretheater, à la carte, and tasting menus are available.
