Another runaway hit from chef-owner Paul Kahan, he returns to his fine-dining roots with this elegant Italian seafood concept. Seasonally driven, regional Mediterranean staples are peppered with contemporary touches like dry-aged rib eye with Calabrian chili butter and hen-of-the-woods mushrooms, and scallops with fermented chilis, black lava salt, and Meyer lemons. Go à la carte or get the full tour with the $125 tasting menu. Either way, save room: the desserts here are notably innovative and not to be missed.
