High atop the 16th floor of downtown Miami's Kimpton Epic Hotel, memorable and sustainable ocean-to-table cuisine is prepared in the bustling, beautiful open kitchen. Executive chef Wolfgang Birk infuses his seafood-centric menu with innovative flavors and a hefty portion of ethos—all fruits of the sea here are certified by the Monterey Bay Aquarium's Seafood Watch. The menu also includes a wealth of “crudo,” or raw dishes, all delicately dressed and exquisitely presented. The seafood is caught daily from the eponymous oceanic region (the Food and Agriculture Organization–demarcated Area 31 region spans the Atlantic Ocean from South Carolina to northern Brazil). Be sure to pop outdoors to the Terrace Lounge to enjoy the Miami skyline and the bay-side views.
