Part of a 103,000-acre working cattle and bison ranch owned by the Nature Conservancy, the Zapata Ranch is focused mainly on all-inclusive, weeklong stays, during which guests learn about bison, land conservation, and renewable ranching practices, and participate in ranch activities (including branding cattle and mending fences). The ranch also offers overnight rooms booked within a month of the stay depending on availability. Rates include all meals and use of the ranch's hiking trails and seasonal programs like the crane migration photo workshop in March.
