This intimate eatery delivers an authentic farm-to-table experience, with a menu that changes daily, drawing from whatever the restaurant is harvesting from its four farms. The menu might include heirloom beet salad with candied pecans and goat cheese mousse, Colorado beef with warm farro salad, or house-raised Tunis lamb with lentils and smoked apricots. Diners relax in leather couches at wall-side tables, with excellent views of the kitchen and its cookbook-lined shelves. If you indulge in the tasting menu ($68)—which includes six courses chosen by the chef—then also splurge for the wine pairings ($48).
